Fresh Chevre

Our fresh Chevre is packaged in plastic tubs while we transition to kraft paper containers. Please use by expiration date written or wrap entire tub in plastic wrap and freeze up to a year. Thaw in your refrigerator over night and bring to room temperature before feasting.

Kick Ash

The award-winning Kick Ash is a ripened bloomy rind goat cheese with vegetable ash center line. The exterior is also dusted with vegetable ash before its bloom at 8 days. Eat fresh for a bright, firm cheese. Keep until mature date for a strong, stinky experience.

Lucy Rouge

Also a bloomy rind, Lucy Rouge is the red head sister to Kick Ash with a dusting of smoked paprika and cumin instead of the vegetable ash. Eat fresh for a bright, firm cheese. Keep until mature date for a strong, stinky experience.

Tipsy

We knew we wanted to do raw milk cheese differently. Our first semi-hard (aged a minimum of 60 days) cheese is washed in Rockbridge Vineyard's Tuscarora Red. This bright red rind sparks contrast to the pearl white paste.

Tickled

Shortly after we experimented with cider and the outcome was marvelous. Using Halcyon Day's Fruition brought out a taste of berry with the tart of cider. Tickled is also a raw milk cheese (aged a minimum of 60 days) but has a natural rind versus a wet or vacuum sealed rind.

Bloomy Rind Cheeses

Kick Ash, Truffle Cache, and Lucy Rouge are bloomy rind cheeses and very much alive. They are packaged in a two-ply cheese paper. We sell bloomies young at two weeks. You may allow the cheese to age further in the package up to the end of the written expiration date or eat young. The tangy young cheese turns into a silky mature cheese within ten weeks. Wrap the entire package in plastic wrap and freeze up to a year. Thaw in your refrigerator over night and bring to room temperature before feasting.

Semi-hard Aged Cheese

Tipsy will keep best vacuum sealed if for some insane reason you were not able to finish your portion and have to hide it from your household. Best kept secret in vegetable bags in the vegetable drawer!
